June Cooking

 

Okay. I suck at blogging. Hopefully now that my trip is out of the way I can catch up and get back to normal. But, this post is not about my trip (which was AWESOME), that will come later.

This post is about all the meals I made in June so that I can catch up a bit.

 

So this ^^ is a low fat Alfredo dish that I got from a Food Network magazine, google it. I didn’t like it very much, it was too thick and pasty in my mouth, but that can be easily fixed… If I make it again I will add some more liquid to make it a bit creamier.

Turkey Quinoa Chili, I think I have posted about this before. It’s SO SO yummy. I hate beans so I eat around them, but other than that, I love this chili- such a rich flavour.

Curry Beef Stir-Fry.. I did NOT like it… at all! I think I might have done something wrong, but I can’t figure out what. It was bland, just gross. I got the recipe from Canadian Living, which usually means it will be delicious, but this one just didn’t work for me.

Darth Taters. Eat, Shrink, and Be Merry. Anything from that book it bound to be good. Chris’s Aunt made these when we went to dinner May long weekend… and we fell in love with them so when we had company we made them.

To go with the Darth Taters, we made Katie Lee’s Logan County Hamburgers: Think grilled cheese making the woo-hoo with hamburgers. Yepp, that good.

These did not work. They were on my list of things to do this summer, and they did not work ๐Ÿ˜ฆ
They are supossed to be Turtle Feudge Chocolate Chip cookies… but they are smushy mud puddle cookies. As Chris just referred to them: “The Suck Cookies”

Chicken Fajita Lettuce Wraps, from 200 under 200. Love that cookbook. Healthy version of Fajitas, how can you not love them. Cucumber Salad from Canadian Living, restored faith in the fact that Canadian Living does not indeed suck ass.

Teriyaki Pork Chops, I made the sauce myself ๐Ÿ™‚ Got the recipe from Healthy College Cookbook.

Yummynummy.

Superby Herby Sauce Exposed Pizza’s from 200 under 200. A light dinner for a hot day ๐Ÿ™‚ Served with Raspberry Poppyseed Salad.

Sweet Chili Thai Chicken…. Just chicken breasts covered and cooked in a sweet chili thai sauce. Easy, Quick, Yummy…. nummy.

 

 

Oh thank goodness that is all out of the way. Now, I can go make todays dinner ๐Ÿ™‚ โค

Part Two: Quinoa Cakes

To go with our Spring Rolls we made Quinoa Cakes and a Lemony Yogurt Sauce. I believe this recipe is from Canadian Living, but I copied it into my Ipad before I got Paprika, and when I copied them into Notes I didn’t copy down sources.

Anyway, we made quinoa cakes. Very much like Quinoa Burgers but with different additives. Instead of a bunch of spices and carrot, there is spinach and other spices.

I didn’t make a very good decision regarding plates… the sauce just looks silly on a white plate… but oh well. I didn’t really like the sauce, but the cakes were good. The sauce was Balkan style yogurt, fresh lemon juice, salt and pepper… and just not for me. I wish I hadย realized that before I put it all over my quinoa cakes, but hey- now I know for next time!

Well, this isn’t a long blog… but it goes with the Spring Roll one, the cakes were just one part of the meal ๐Ÿ™‚

Chris’s Turn: Broccoli Cheddar Soup

The other night I had to work over dinner time, so Chris made dinner. The plan was Broccoli Cheddar Soup, which is one of our favorites. We originally used the recipe from ‘101 Homestyle Favorites’ but have since then put our own few twists into it.

I think Chris followed the recipe pretty closely, the only change he made was using quinoa flour instead of normal flour. To make quinoa flour, we just put normal quinoa into the magic bullet and grind the crap out of it.

I get kind of nervous when Chris cooks by himself, not because he can’t cook or that I don’t trust him or anything… It’s just my OCD that makes me antsy about not being the one cooking. But, as it usually is, Chris’s meal was very good! Especially after a HORRIBLE rainy day, the soup was just perfect.

Broccoli Cheddar soup is so easy to make, and so quick I love it. It’s a pretty Budget Friendly meal… I mean, other than the cheese which is expensive (not because it’s fancy cheese, but because cheese in general is expensive).

Catch-Up: Taco’s, Breakfast, Pizza… and other stuff I think

Okay, I know I have slacked but it’s exam time, what else would anyone expect between studying, working on papers, and starting a new job I have zero seconds to spare. But, I have learnt something, NEVER again take 6 courses in one semester! There, hopefully that will lower my stress levels this time next year… hopefully.

So, one of those nights that I didn’t post anything we went to Subway while out shopping for some stuff for the apartment… included in our loots for the night was a shelving unit for the bathrom (one of the ones that goes over the toilet)

The next night we made buffalo chicken taco’s… it was difficult to get a picture of them once they were rolled up, so I took a picture of one before I rolled it.

From bottom it goes buffalo chicken chunks, cheese, lettuce, hot sauce (b/c I like it spicy), ranch dressing, yellow bell pepper.

They were delicious, and really simple… just something quick to make ๐Ÿ™‚ and served with veggies and dip

Saturday morning Chris made a huge breakfast โค all by himself, I just watched him cooking the bacon

Soooo much food! But very yummy =D

For dinner that night, we had to make something quick because I had to work at 5 at my new job… Work was really good, it was my first event at the new place, and it was the first gay wedding I have ever worked, and having been working at banquets for over a year this shocks me, it was fun ๐Ÿ™‚

For dinner we made pizza, we had the extra crust from when we made buffalo chicken pizza and we had sausages still in the freezer so we put together a pizza really quick before I went to work

Then today we made skor-bit blondies, Which I haven’t taken a picture of quite yet.. so I’ll put that up tomorrow.

And for dinner we made Quinoa Burgers and as a side I was planning to make broccoli cheddar soup but it is BOILING in our apartment so I opted for fried eggs inside of green pepper rings

I’m not even going to let myself get onto Quinoa… I love QUINOA!!!

The egg rings were fun, I found them while Stumbling ๐Ÿ™‚

I need to get back to school stuff, so I will find the link to the original recipe for tomorrow

Turkey Quinoa Chili

After the hiatus of moving apartments and getting everything (well, almost everything) set up and finally making it to a grocery store… The first actually post-worthy meal made in the new apartment was Turkey Quinoa Chili.

I think this might be my first post about quinoa… I love’s me some quinoa.

Quinoa is a superfood that is really healthy. It’s like rice, but, in my opinion, MUCH better.

I am a strong believer that EVERY kitchen should have quinoa in it, it is easy to make, healthy, and goes well with pretty much everything!!

Those are some of the meals I made a while ago with Quinoa… the other night, I made Turkey Quinoa Chili. It was really good. I cooked it early in the afternoon and let it simmer until dinner time, which gave it a really rich taste. I personally think that beans taste like sand, so I ate around them, but apparently they were good ๐Ÿ™‚
