Sloppy Joes!!

Mmm, Mmm, Mmm! These Sloppy Joes were great! I got the recipe from “101 Homestyle Favorites” by Gooseberry Patch… The original recipe says to slowcook the mixture all day, but we just made them then ate them right away.

One thing that I really enjoyed about these Sloppy Joes is that they have a bunch of vegetables in them and you can barely tell- I’m not picky about eating vegetables and neither is Chris, but it’s nice to know recipes that blend them in for when I have picky kids later in life 🙂 These Slppy Joes have celery, green pepper, onion, garlic, and carrot in them 😉

I served the sloppy joes with Sweet Potato Fries, which are one of my favorite foods. I make sweet potato fries by cutting them up and tossing them in olive oil and hot sauce (my preference is Franks buffalo wing sauce)… then spread them on a baking tray and salt/pepper them before baking on 475 for 10 minutes, flipping, salt/pepper that side, and bake for 15-20 minutes longer.

The next night Chris and I went to his grandparents house for Easter Dinner. I took the following picture of the rocks on the other side of the lake, and just wanted to share how beautiful the area I live in is… Sudbury may be small and somewhat boring (and I don’t even live IN Sudbury, I love in a tiny little town, Copper Cliff), but at least it’s a pretty area, no cement and metal everywhere you look, that’s for sure!
