Asian Orange Chicken

The other night I made Asian Orange Chicken. This is one of the favorites in our apartment. It’s just like the Orange Chicken at Manchu Wok. Yum Yumm Yummm!! I found the recipe on Allrecipes.com, but have found a ton of versions online.

One word for the wiser- If you ever chose to make this dish, make sure you marinate the chicken in the sauce for about 2 hours before tossing it in flour. This makes the flavours so rich and thorough, much better than if you don’t marinate it. We had it served over very thin rice noodles. We usually have it over Raman noodles, but this way tasted jsut as good ๐Ÿ™‚ The sauce stood out more with the thin thin noodles, but the Raman noodles made it more substantial of a meal.

After dinner, Chris and I were in need of some dessert. I attempted to make Butterscotch Cresents. I found the recipe on Tastebook.com a few weeks ago. Notice how I said ‘attempted’, well that is because they were nearly IMPOSSIBLE to roll together. I eventually gave up and just smushed them into whatever shape would hold the butterscotch chips.

All said and done, they were not worth the hassle. Chris and I both agreed that we would have preferred regular old cresents with hot butter. The cresent baked before the butterscitch/coconut mix melted… they were difficult to roll together, and the stuff kept falling out without even being touch… and they didn’t have that great of a taste. We served them with ice cream, and the ice cream is what made dessert worthwhile. โค

Sloppy Joes!!

Mmm, Mmm, Mmm! These Sloppy Joes were great! I got the recipe from “101 Homestyle Favorites” by Gooseberry Patch… The original recipe says to slowcook the mixture all day, but we just made them then ate them right away.

One thing that I really enjoyed about these Sloppy Joes is that they have a bunch of vegetables in them and you can barely tell- I’m not picky about eating vegetables and neither is Chris, but it’s nice to know recipes that blend them in for when I have picky kids later in life ๐Ÿ™‚ These Slppy Joes have celery, green pepper, onion, garlic, and carrot in them ๐Ÿ˜‰

I served the sloppy joes with Sweet Potato Fries, which are one of my favorite foods. I make sweet potato fries by cutting them up and tossing them in olive oil and hot sauce (my preference is Franks buffalo wing sauce)… then spread them on a baking tray and salt/pepper them before baking on 475 for 10 minutes, flipping, salt/pepper that side, and bake for 15-20 minutes longer.

The next night Chris and I went to his grandparents house for Easter Dinner. I took the following picture of the rocks on the other side of the lake, and just wanted to share how beautiful the area I live in is… Sudbury may be small and somewhat boring (and I don’t even live IN Sudbury, I love in a tiny little town, Copper Cliff), but at least it’s a pretty area, no cement and metal everywhere you look, that’s for sure!

Strawberry Lemonade

This is the start of my list of “Things to do this summer…”

There are 58 things to do on my list. I created the list to keep me busy without going stir-crazy here in Copper Cliff this summer. Everything on the list is stuff I found on Stumble Upon. Most of the things to do are from either Foodgawker or Craftgawker (I absolutely love these sites!)

I began my list with Strawberry Lemonade from Blogs.bable.com

This is how things start… well, at least when they get to my house.ย They start as seeds and all that, but I live in a small basement-ish apartment with no chance of a garden… I was thinking of trying to grow some herbs or something but I doubt even those would last let alone lemons and strawberries ๐Ÿ™‚

Then I blended the strawberries with some water while Chris juiced the lemons (guess he got the short stick :P)

Then as most juices happen, Chris and I added these two liquids together and added warm sugar water to the mix, stuck in the freezer for about an hour, stirring once after half an hour.

AND finito. Strawberry Lemonade. Check ONE on my list of things to do this summer ๐Ÿ™‚

Taquitos & Maple-Bacon Potatoes

The other night I made TAQUITOS!… I LOVE taquitos. Every time I go home I go to 7-11 and get taquitos, it’s a bonding moment for my brother and I (and Chris sometimes). And since I haven’t been home in FOREVER and don’t know the next time I will be able to go home, I made a taquito recipe that I ‘Stumbled upon’. They were SO so SO good.

It was difficult to get a good picture, but the flavour is what matters. They look boring, but taste great! Oh, and a positive… they took about 15 minutes to cook!!!

I got the recipe from ‘Pennies in a Platter’ (I found it on Stumble Upon).

As a side to go with the taquitos I made the Maple-Bacon scalloped potatoes that I have been planning to make for like 2 weeks! These were really good! Recipe from Kraft

Being scalloped potatoes they take a while to cook, but we weren’t in a rush to eat so that didn’t bother us ๐Ÿ™‚ The recipe calls for pre-made bacon bits, I used real bacon that we made the other day for breakfast. They have great flavour, the sauce is delicious and the maple and bacon both stand out jsut enough to be tasteful without over powering the rest of the flavours.

It was an odd combination of the taquitos and the potatoes, but the spicy in the taquitos was balanced out nicely by the sweetness of the maple syrup in the potatoes. I recommend people try both, maybe not at the same time… but definatly try both.

S’getti & Meatballs

Last night I didn’t end up having any dinner, I had to work at 5 so I decided to eat after work, but when I got home I didn’t really feel all that hungry so I just hadย a small snack. BUT, the night before last I made a great spagetti and meatball dinner.

I whipped together some pasta sauce with tomato sauce, chili pepper, onion, garlic, oregano, basil, salt and pepper. Then made meatballs… well, I put the ingredients in the bowl and had chris mix it (NO way was I putting my hands in there!!). I got the meatball recipe from Allrecipes.com, it’s called Meatball Nirvana.

As a little something extra I made Garlic Cheddar biscuits, they taste just like the ones at Red Lobster. My butter sauce for on top was a bit too salty, but other than that they were melt in your mouth delicious!!

This made for a great meal before my last exam of the year… but it left myย hands smelling like garlic, so that was all I could smell during my exam even though I had washed them. I contemplated rubbing a piece of gum over my fingers hoping it would have the same effect as toothpaste, but I only had one piece and I needed it for my garlicbreath.

One thing I did make yesterday before going to work was a pretty BA sandwich!

This sandwhich was a heartattack waiting to happen, but it was nice and filling. It had buffalo chicken pieces, bacon, ham, and mozzarella cheese on it. THEN I dipped it in spicy mayo- Whew!

Chicken Cordon Bleu

I know that the other evening I promised a picture of the Skor-bit blondies, but I haven’t had one since then so I have to put that off.

I had an exam yesterday then spent most of the day in the library so I didn’t have time to post, not that I really had anything to post.

But today I do because Chris and I had a great dinner last night ๐Ÿ™‚

I made Chicken Cordon Bleu and a Green Bean & Red Pepper side dish that was inspired by Chef Rick McCutcheon (from the Idylwylde Golf & Contry Club). My side dish was not as good as his, since I don’t actually know what he puts in his… put I fried up some green onions, red pepper, and a lot of butter with some basil, then added green beans that had been boiled for 3 minutes.

I whipped together a hollandaise sauce that I found on Allrecipes.com, it called for 1/2 a lemon juiced… and I guess I have bigger lemons than the person who made the recipe, because it was SUPER lemoney. Next time I am going to cut that in half and only use a quarter of the lemon.

My Chicken Cordon Bleu has ham (just deli-meat, Black Forest Ham), Mozzarella cheese (usually swiss, but that stuff’s expensive!) and is covered with crushed up soda crackers ๐Ÿ™‚

I chose this picture because you can kind of see the stuff inside. When I first contemplated making Chicken Cordon Bleu I was terrified because I thought it would be a long difficult process, but it is actually pretty easy. Beat the crap out of a chicken breast so it’s thinned out a bit, salt and pepper, place the cheese across it (try to stick to the middle so that it doesn’t fall out when you roll it), then a slice of ham, and roll it up sticking toothpicks through the fully rolled chicken to make it stay, put in a pam-sprayed baking dish and cover in crushed soda crackers- voila. Simple, quick, and painless.

I spent my evening doing very little studying, a lot of Smallville watching, and making a list of things to do this summer, while I’m not working ๐Ÿ™‚ since I’m living in a small town, Copper Cliff, and can’t drive, there is nothing to do so I made a list/am making a list.

As I have mentioned a few times, I am addicted to StumbleUpon.com… ADDICTED. This is where I got my list of thing sto do this summer, here is a few examples:

Catch-Up: Taco’s, Breakfast, Pizza… and other stuff I think

Okay, I know I have slacked but it’s exam time, what else would anyone expect between studying, working on papers, and starting a new job I have zero seconds to spare. But, I have learnt something, NEVER again take 6 courses in one semester! There, hopefully that will lower my stress levels this time next year… hopefully.

So, one of those nights that I didn’t post anything we went to Subway while out shopping for some stuff for the apartment… included in our loots for the night was a shelving unit for the bathrom (one of the ones that goes over the toilet)

The next night we made buffalo chicken taco’s… it was difficult to get a picture of them once they were rolled up, so I took a picture of one before I rolled it.

From bottom it goes buffalo chicken chunks, cheese, lettuce, hot sauce (b/c I like it spicy), ranch dressing, yellow bell pepper.

They were delicious, and really simple… just something quick to make ๐Ÿ™‚ and served with veggies and dip

Saturday morning Chris made a huge breakfast โค all by himself, I just watched him cooking the bacon

Soooo much food! But very yummy =D

For dinner that night, we had to make something quick because I had to work at 5 at my new job… Work was really good, it was my first event at the new place, and it was the first gay wedding I have ever worked, and having been working at banquets for over a year this shocks me, it was fun ๐Ÿ™‚

For dinner we made pizza, we had the extra crust from when we made buffalo chicken pizza and we had sausages still in the freezer so we put together a pizza really quick before I went to work

Then today we made skor-bit blondies, Which I haven’t taken a picture of quite yet.. so I’ll put that up tomorrow.

And for dinner we made Quinoa Burgers and as a side I was planning to make broccoli cheddar soup but it is BOILING in our apartment so I opted for fried eggs inside of green pepper rings

I’m not even going to let myself get onto Quinoa… I love QUINOA!!!

The egg rings were fun, I found them while Stumbling ๐Ÿ™‚

I need to get back to school stuff, so I will find the link to the original recipe for tomorrow

Leftovers & Cupcakes :)

Okay, so I lied when I said I would be making Buffalo Chicken Tacos or Orange Chicken… I completely forgot that Chris had to stay late at work and I was alone for dinner. So, I packaged up the chicken for dinner tonight and had lefts overs ๐Ÿ™‚

I heated up a sausage and made some cream of mushroom soup, and just as a little side I made some of my favorite snacks as a child… Crackers and Butter. I used to devour them, and hadn;t had them in years so I decided to make a few!

Since this didn’t satisfy my cooking desires for the day, I decided to make a dessert for Cris and I when he got home. The other day my friend introduced me to a website www.stumbleupon.comย and while flipping through pages I ‘stumbled upon’ a blog called “How Sweet it Is” and a recipe for “One Bowl Vanilla Cupcakes for Two”… I obviously HAD to try. I made one mistake… instead of TRYING the recipe as it was, I went right ahead and threw in some butterscotch chips. The result was yummy, but I would have liked to try the original first ๐Ÿ™‚

I also did not let them cool completely, I got a little antsy because Storage Wars was starting and tried to ice them while they were still warm, which is just asking for a huge mess!! Although it doesn’t change the taste so I am not complaining ๐Ÿ™‚

Sausages :)

Yesterday I bussed to school to do some studying. Well, my intent was to go and study, but instead we (the girl I was meeting up with & I) kinda just creeped facebook and such for awhile, we did do a bit of studying but not as much as I would have liked to. I brought my Bento Box filled with snacks for the afternoon. I first saw the Bento Boxes on another blog called “The World According to Eggface” and LOVED them right away.

I ordered mine off of Ebay because Amazon doesn’t ship them to Canada, but it is SO worth the money. My Bento is black and pink, and once I start making more money (thank goodness the school year is ending so I can work fulltime for the summer and save some money!!) I will be ordering a set of different inserts so that I can pack various other items ๐Ÿ™‚ (like a sandwhich, my current Bento inserts do not fit a full sandwhich, but the pack I will be getting does).

Because I was only packing a snack I kept it really light. Two little oranges with two mini ‘Big Turk’ bites, a nutrigrain bar with some Jolly Ranchers, Cashews, and in the sealed boxes are Carrots (the top right one) and ranch (the itsy-bitsy one).

I didn’t end up eating most of this, but it is light weight and easy to carry around because all ofย the pinkย boxes fit into the one black box, so it fit into my mini back-pack easily.

For dinner Chris and I had sausages and Butter & Herb sidekicks.

Okay, okay. So last night’s dinner did not require any real cooking on my behalf. I took the easy way out… The plan was to have sausages and make a potato recipe from Kraft.. I can’t remember the proper name of them right this second, but it’s scalloped potatoes with maple syrup and bacon. Instead, I let my cold get the better of me and I just settled for making a Sidekick. But, nonetheless, dinner was quick, easy, and yummy… Sometimes you need a meal like that ๐Ÿ™‚

Tonight we are either having Asian Orange Chicken or Buffalo Chicken Taco’s… Haven’t quite decided yet, I’ll see how I feel around 4pm ๐Ÿ™‚

Buffalo Chicken Pizza!!

As promised, last night we made buffalo chicken pizza! It was a really yummy take on regular old pizza!

Instead of pizza sauce, you use blue cheese or ranch (Chris likes blue cheese, I like ranch, so we did half and half)… then cover the dressing in chopped up chicken tossed in hot sauce and melted butter, then cover that in mozzarella! Simple, quick, and after baking for 10 minutes- DELICIOUS!!

We ended up eating the entire pizza we liked it so much! One thing, if you don’t like spicy food, mix hot sauce with melted butter and taste it, if it’s too spicy add more butter until it is your desired spicy-ness. We like spicy food, so we only put in about a tablespoon of butter.

Another benefit to this recipe, if you use a pre-made pizza crust, it takes about 20 minutes to make (including cooking the chicken).

Today I am off to campus to study and work on my last essay of the year! I’m gunna bento box my lunch and for dinner Chris and I are having sausages… should be an easy day ๐Ÿ™‚ I can’t wait to get out of this apartment, I am starting to go stir crazy sitting around all day studying!!
